Business lunch, decoded

The business lunch is the most reliably good-value meal in Dubai, and also the easiest to get wrong. The format is fixed — usually three courses inside a set window — so the difference between a good one and a forgettable one is almost never the price.

What separates them is the kitchen's attitude to the format. The best ones treat it as a shorter version of the à la carte menu. The weakest treat it as a way to move stock.
