The queue outside starts at seven and nobody in it is wearing a coat—that's Amsterdam dining in 2026. This city's restaurant scene has moved on from the stuffy French classics that dominated a decade ago. Now you've got high-end spots that feel like actual restaurants rather than museums, ramen joints with real followings, and a few old-school places that have stayed sensible about their prices while everyone else lost their minds.

This list is ranked by budget tier, then by reliability within that tier. The two-star Michelin places sit at the top—book a month ahead for Friday and Saturday. Below that, the one-star restaurants and the handful of places with real reputation but no stars. Then the spots where you'll actually want to eat on a Tuesday night without dropping a month's rent.
