Saturday and Sunday brunches priced from a $48 sit-down to $230 vintage champagne, with what each free-flow package actually covers.
Singapore brunch comes in three formats and the gap between them is larger than the menus suggest.
Free-flow is the format the city is known for. A fixed price buys a set food menu and unlimited pours of a named list, usually across a two- or three-hour window, usually on Sunday. The economics are blunt: the package pays for itself somewhere around the fourth drink and not before. A table that wants two glasses each and a long conversation is subsidising the table that does not.
The hotel buffet is the second format and it is the one to pick when the party is mixed — children, non-drinkers, someone who wants only oysters and someone who wants only the carvery. Per head it looks expensive and per person satisfied it usually is not.
The third is café brunch, which in Singapore means a short menu, serious coffee, and a bill under a third of the other two. Tiong Bahru, Jalan Besar, Keong Saik and the shophouse streets in general are where these cluster, and the queue at 11am on a Sunday is real. Go at 9am or go at 2pm.
The question that settles all of it: is this a meal or an afternoon? A meal is a café. An afternoon is free-flow. Booking a free-flow package for a meal is the most common and most expensive mistake in Singapore dining.
Prices here are almost always quoted ++, meaning service charge and GST come after. Add roughly 19% before deciding what something costs.
